What's For Dinner?

The dreaded question. I almost always answer the children’s question with, “Delicious food.” More often than not I haven’t a clue. So i think it’ll be a good thing to post favorite recipes to remind myself of  delicious things to make. Tonight I made a husband favorite:

King Ranch Casserole

  • 1 onion, chopped
  •  1 bell pepper  
  •  2 cups cooked, cubed chicken
  •  1 can cream of mushroom soup
  •  1 can cream of chicken soup
  •  1 can Rotel (tomatos and green chilis)
  •  10 flour (or corn) tortillas
  •  2 cups chicken broth

Directions:  Tear tortillas into bite sized pieces and dip into chicken broth to moisten. Place half onto the bottom of a greased 13 X 9 casserole dish. Saute pepper and onion, add diced chicken and layer 1/2 on tortillas. Combine soups and Rotel and spread 1/2 of this mixture over chicken. Top with half of grated cheddar cheese. Repeat layers: tortillas, chicken, soups and cheese. Pour leftover chicken broth on top. Bake at 350 degrees for 40 mins or until cheese is melted and bubbly.
